Weights and Measures in 18th-Century Receipts: Modern Equivalents

1 wine glass (often just called "glass") = 1/4 cup = 4 tablespoons (This is not the same as a modem wine glass.)

3 teaspoons = 1 tablespoon (not as exact as our modem measuring devices)

1 pint = 1 pound, except flour which is 3 3/4 to 4 cups

1 tumbler = 1 cup = 1/2pint (The word "cup" in old receipts usually means teacup, which is different amounts for different periods. 3/4 modem cup works well for 1 teacup.)

1 coffee cup is usually 1 modem cup or 1/2 pint

1 gill (pronounced "Jill") = 1/2 cup = 8 tablespoons

1 gill = 2 wine glasses

10 eggs (in the shell) = 1 pound (This is the equivalent of modem small eggs. If they are not available, reduce the number of eggs used.)

1 bushel = 4 pecks = 8 gallons

1 peck = 8 quarts = 2 gallons
